Understanding Nitrates and Nitrites in Food

Nitrates and nitrites, commonly used in the curing of meat and meat products, serve as preservatives and enhance the color of food. They are permitted for use in food as their respective salts – sodium nitrite (E250) and sodium nitrate (E251). While these compounds help inhibit the growth of microorganisms, their presence must be carefully monitored to ensure consumer safety, particularly given the potential formation of nitrosamine compounds in the stomach, which are considered potentially carcinogenic.


Regulations for Nitrate and Nitrite Testing

The European Union sets specific limits for the use of nitrates and nitrites in food. For cured meat products, the maximum limit is set at 150 mg/kg for each compound. In October 2023, Commission Reg (EU) 2023/2108 introduced new maximum limits for a range of food products, including cheese, meat, and fish. Regular testing ensures that food products comply with these regulations and helps prevent the risk associated with nitrosamine formation.
