Cereulide in Food
Fitz Scientific have developed a method for the analysis of Cereulide in a wide range of food products.
Cereulide is an emetic toxin produced in foods by certain strains of Bacillus Cereus. This toxin is highly resistant to heat and acids, therefore, it can survive cooking, baking and boiling. When consumed, it can cause sudden nausea and vomiting.
Recently, concerns about Cereulide have led to recalls of infant formula products, highlighting the importance of testing.
Our newly developed method allows us to check for Cereulide in many types of food, including:
Infant formula and dairy products
Rice dishes
Meats and meat products
Ready‑to‑eat meals
Pastries and confectionery
The method is based on ISO18465:2017 Microbiology of the food chain – Quantitative determination of emetic toxin (Cereulide) using LC-MS/MS technology.
